I think it's a neat feature, but I'd really, REALLY like to be able to turn it off. Right now I don't think I can.

Yeah. Especially b/c I have the Gchat desktop app, and I actually just blundered my way through a conversation b/c half the responses were going into the (minimized) Gmail window. Make it stop, Tom.

to sign out of the gmail chat feature, simply set your status to "sign out of chat." easy enough.
